Nicknamed "Happy Owl," Fuku Chitose is made in the yamahai method, a more prolonged brewing process that results in more complex flavors.

It has a light mouthfeel leading to layers of spice and fall vegetable, ending with a long, dry finish.

A great pairing with nutty cheeses.
