Muroka meaning non-charcoal filtered, Nama meaning unpasteurized and genshu meaning not diluted with water.
These three steps, filtering, pasteurization and dilution with water are all common modern practices in sake production which can help with the clarity, consistency, stability and cleanliness of sake.
Because MNG has less human intervention during production, for some sake lovers this style of sake is highly sought after for enhanced depth, acidity, flavor, richness and/or other unique characteristics.
