Made using all local ingredients by a tiny crew of 3 employees, Nishide Shuzo's "100 Year Sake" is a traditional operation of 5 generations using the yeast Kuratsiki Kobo, found only in the brewery itself, which gives this sake a wild earthiness underlying its mellow, balanced mouthfeel, with expressive tropical fruits and umami, and extra crisp acidity on the finish.
