Shichi Hon Yari, made by Tomita Brewery, Japans 3rd oldest and founded 1540, is now run by the son, one of a new generation of brewmasters. Their seasonal namazake is released immediately after fermentation finishes and is bright and fresh with notes of tropical fruit and fresh hay, with a bracing acidity. Pair with grilled veggies.
