Calrose, whose name means "California rose," is a medium-grain rice original to California.
Halfway between Japanese short-grain rice and long-grain rice known from places like Thailand, and combines the best features of both.
A Japonica variety that is longer and larger than short-grain rice, Calrose is the most widely grown in California.
Calrose originated from ”Tankan Wataribune”, a rice variety suitable for sake brewing that is the root of Yamadanishiki.
”Tankan Wataribune” was crossbred with Omachi, so Omachi can also be considered the ancestor of Calrose.
Calrose rice is very hard and does not dissolve easily, but it has a high protein content, which is said to create a full-bodied flavor.
