Niigata is Japan's Snow Country, where traditionally sake storehouses were buried in snow piles, called Yukimuro, to provide consistent, natural refrigeration. Hakkaisan Yukimuro is aged three years and opens soft with a layered, umami-heavy palate.

Pairs well with short ribs and western cuisine.
