This sweet potato shochu is a bit of a contradiction, powerful yet gentle.

There is a light fragrance which betrays little about the flavor profile, and the first sip begins slowly and smoothly.

Once on the palate, a mix of classic sweet potato and banana flavor rise and crescendo with the higher alcohol content, before receding back like a great wave, leaving a lingering shadow on the palate.
