Dense & Complex
In 2006, Sempuku brewery revived Shinriki rice which was thought to have gone extinct in the 1920's, brewing sake with the rare rice varietal using the kimoto method and without carbon filtration or dilution, just like they did in 1920s. It is milled only to 85% but has a subtlety of flavor with aromas of tropical fruit balanced with a structured, umami-driven palate.
Serve chilled or room temperature and pair with meats and cheeses.
