This is our collection of Kimoto sake.
The Kimoto method of sake production is hundreds of years old, where kurabito mash the mixture of sake rice, water and koji together with long wooden poles to help start the fermentation process and develop natural lactic acid.
Kimoto sake can have a wide range of flavors, though slight acidity and earthiness can be classic tasting notes of Kimoto sake.
