Nama, meaning "fresh" or "raw," indicates a sake has not been pasteurized, maintaining a freshness or zippiness that simply cannot be found in pasteurized sake. The Nama taste is an X-factor that instantly distinguishes itself from other sake. Some Namazake in this collection is classified as Namachozo or Namazume, which means the sake has been pasteurized once, before storage or before bottling, respectively.
