Our collection of sake made using Yamada Nishiki rice.
Known as the king of sake rice, it is undoubtedly the No. 1 sake rice in terms of both production volume and name recognition.
Yamada Nishiki has a low protein content and can be highly polished, making it an easy variety for brewers to use in sake brewing.
Additionally, because of the firm body of the rice it is easy to produce aroma, making it ideal for Ginjo and Daiginjo sake, which require a high polishing ratio.
Yamada Nishiki also tends to retain the umami and sweetness of the rice, another benefit in higher grade sake production.
Among Yamada-Nishiki, the Special A districts in Miki and Kato cities in Hyogo Prefecture are the pinnacle of Yamada-Nishiki.
